Veg I Eat, Veg I Avoid

Most paleo-boosters will say eat as many vegetables as you want, so long as they’re low carb:

  • broccoli
  • cauliflower
  • kale
  • spinach
  • rocket
  • various lettuces
  • sprouts
  • chard
  • cucumber
  • courgette (zucchini)

Most of the above are leafy greens. I can eat all of them in limited quantities with my diabetes. Last night, for instance, I had a salad full of rocket and kale with my roast beef. My blood was very good this morning.

Root vegetables are a no-no especially if cooked in any way. My pancreas just cannot cope. There are just too many sugars in carrots, parsnips, sweet potato, potato, swede, etc. This is a shame because I can whip up some awesome roasted root vegetables in goose fat. If I could wave a wand and get one food back from my old diet, it would be potatoes.

Even if my pancreas worked properly, I would avoid the above root vegetables most of the time because I’m following the keto diet. Those foods are too “carby” for ketosis.

As an aside, I’ve been growing my own kale, chard and rocket in the back garden. I’m no green thumb, and these plants pretty much take care of themselves. The investment in time and money was minimal, and the payoff, so far, has been tons of fresh veg that I can eat as a diabetic.
